This year I added 2 new treats into my rotation for my clients and they were a BIG hit!!! Requests are coming in for the recipes so I have added them to my blog for your enjoyment.

Lemon Turmeric Energy Balls
I would like to thank Joan for introducing me to these yummy balls which she found from Natalie. Lemon Turmeric Energy Balls full of beautiful citrus aroma enriched with healing spice - TURMERIC, and superfood - CHIA SEEDS. These immune boosting, refined sugar-free energy balls are rich in fibers and plant-based proteins. Perfect for everyday snacking.

Ingredients
12 Medjool dates
1 cup rolled oats gluten free
½ cup almonds
1 tablespoon chia seeds
4 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 teaspoon turmeric ground
½ cup shredded coconut for dusting
Instructions
Remove the pits from dates and soak them in hot water for several minutes. When the dates are softened, drain them and place in food processor. Save the water.
Add the other ingredients to a food processor and blend until mixture turns into a dough-like consistency. Add 1 tablespoon of water in which you have soaked the dates if the mixture is too dry.
With the small spoon scoop the mixture and roll into balls. Roll the balls in shredded coconut and place on the baking sheet.
Store energy balls in an airtight container in the refrigerator until serving.
Keep the energy balls frozen up to 3 months in the freezer.
Oatmeal Chocolate Fudge Bars from Chocolate Covered Katie

Yield: 20-25 bars
Ingredients
2 3/4 cup quick oats (220g)
1/2 tsp salt
1/2 cup pure maple syrup (or agave or honey)
1/4 cup peanut butter, or allergy-friendly alternative
1 tbsp water
1 tsp pure vanilla extract
4 to 5 oz chocolate chips
1/2 cup peanut butter, or allergy-friendly alternative
Instructions
*If you want a thicker chocolate layer than the bars in the pictures, feel free to increase the amount of chocolate chips.
Line an 8×8 pan with parchment or wax paper, and set aside.
Stir together the maple syrup, 1/4 cup peanut butter, water, and vanilla until smooth.
Stir in the oats and salt.
Transfer about 2/3 of the mixture to the pan, and press down very well, using a second sheet of parchment to press it evenly into the bottom of the pan.
In a separate bowl, carefully melt the chocolate and 1/2 cup peanut butter. Stir until smooth. Pour this evenly on top of the crust in the pan. Sprinkle the remaining oat crumbles on top of the chocolate layer, then press down. Refrigerate or freeze until firm enough to cut squares.
